“L’Osteria Bio!” di Galbusera Bianca si trova all’interno di un Borgo Agricolo Sostenibile, in una azienda agricola biologica biodinamica di 20 ettari specializzata in biodiversità di antiche varietà di frutta e ortaggi, affiliata al Sistema Oasi di WWF Italia, nel cuore del Parco di Montevecchia e Valle del Curone, 40 km a nord di Milano verso Lecco, con orti e frutteti sotto le finestre, boschi e prati e colline e ruscelli tutto intorno.
“L’Osteria Bio!” è un luogo speciale di natura accogliente dove riscoprire sapori dimenticati di cucina naturale, dove assaporare il cibo della antiche varietà di frutta e ortaggi della nostra terra, celebrare gli incontri tra le persone, e nutrirsi con i colori e i profumi della sua energia.
Nell’”Osteria Bio!” la cucina è biologica e molto semplice e naturale, quasi completamente vegetariana, con grande abbondanza della nostra verdura e frutta, formaggi e qualche salume locale, nell’ ambiente rustico del vecchio fienile ristrutturato in bioarchitettura che ora chiamiamo “Casa della Terra” …centrifughe di verdura e frutta, pane fatto in casa con formaggi, affettati locali e le nostre conserve sfiziose, grande insalata molto mista con salsine speciali, pasta o riso o cereali con verdura e frutta, torte dolci e salate di verdura e frutta, sorbetti di fiori, verdura e frutta,…e tutte le varianti secondo l’ispirazione dei sapori e delle stagioni.
E i bambini, nei laboratori didattici delle domeniche, saranno giocosamente accompagnati a mettere le manine nella terra morbida e soffice per seminare piccoli ortaggi, trapiantare piantine, scoprire nomi e favole di alberi ed erbe, e ritrovare il rapporto diretto con la terra che ci nutre.

The centre and heart of the oasis is the organic, biodynamic farm that works 20 hectares(13 of which are farmland, and 7 woodland), specializing in biodiversity in fruit, vegetables, medicinal herbs, edible flowers, and poultry and game.
The richness of the farm’s biodiversity, and the ideas, plants, and seeds that we’ve sown in the ground since 1999 have made this the first private Italian farm affiliated to the WWF Italy Oasis System.
Galbusera Bianca was selected for the great wealth of its collections of ancient varieties of apples, pears, plums, figs, peaches, and tomatoes. It’s a unique place because Nature has preserved its harmony here.
Inside this small world there’s an agricultural complex made up of a main farm building, three farmhouses, and a stable. They are joined up together to form a small village which has been on historic record since 1348. This complex is now being completely renovated using bio-architectural techniques and renewable energy consumption to achieve the greatest possible respect of the environment.
There'll be accommodation, and cultural and educational activities. The services will be of outstanding quality, and there’ll be an innovative programme of activities in order to enjoy the natural environment and achieve individual wellness.
What makes Galbusera Bianca an “Oasis” is the very location in which it lies - suspended in the Valle del Curone and surrounded by the hills of Montevecchia, it hangs in mid-air between the earth and the sky.
This is a place of peace, serenity and silence where we can rediscover our own roots through “deep ecological” work; different experiences in nature that reconnect our selves to the memory of our past through the rediscovery of its fruits: ancient fruits, forgotten vegetables, mislaid flavours.
This is what we want to transform into our real future paradise - the understanding and know-how of a bygone farming world.
